Paella
Paella - Valencia. Video
Ingredients (4 servings):
500 gr. chicken
500 gr. rabbit
250 gr. of green broad bean
100 gr. tomato
400 gr. rice
100 CC. virgin olive oil
Saffron or yellow food coloring
Sal
Red pepper
Water
Rosemary
Preparation:
1 - The paella pan should be wide and the fire should cover the whole base.
Put oil just in the middle of the paella. When it starts to smoke, add the chicken and rabbit in small pieces and add salt. Fry at medium fire until it is well browned.
2 - Add chopped green beans and stir-fry with the meat for three minutes.
3 - Move the meat and vegetables to the edges of the paella, and in the center, add cut up grated natural tomatoes for one minute, turn around well.
4 - Add water until it reach the edge of the paella with a teaspoon paprika and as salt as you like. Simmer it for around 30 minutes. Check the salt, it should be a little sense.
5 - Then, you add the saffron and the dye. The water should cover the ingredients. Now you add the rice and distribute it with a shape of a cross, so that the rice will protrude above the water.
- Distribute well the paella rice and let it making.
Skin .- Don't remove the rice. Otherwise, it will release its starch and the grain won't be loose.
6 - When it starts to boil, put down to medium fire. It will be so for 20-25 minutes, depending on the degree of evaporation of water. When it is almost done, put over a few sprigs of rosemary.
When the broth has evaporated, put out the paella from the fire and let stand for five minutes.
Recommendations:
- If there is still lot of broth but it seems already cooked rice: raise the fire the last 5 minutes so that the broth evaporate as soon as possible.
- If there is little broth and the rice is still hard: turn down the fire to consume it with low fire and remove it from the fire 5 minutes before. Then cover it with a clean cloth moistened and let it stand in this way a few minutes.
Suggestions:
- 100 gr. peas can also be added when you add the green beans.
- If we do not have sprigs of rosemary, you can pour an infusion of rosemary in the boiling water.
- When serving, accompany it with slices of lemon and squeeze a few drops of lemon on the paella. It is delicious!, who likes lemon.
